Root to Stem Zero Waste Meal Prep Class

Class Description:

Learn the pro tips to sustainable food prep with Holistic Nutritionist and Chef Megan Knipp. We’ll use the stalks, stems, leaves, and roots to build a zero-waste, nourishing meal for the week ahead. All skill levels welcome!

The Menu:

Roast Winter Veggie Pasta with Fennel Frond Pesto. Gluten-free polenta available. Pasta provided by local Community Grains.

What’s Included:

  • Sustainable gift: Wax food wraps or produce bags

  • Meal Prep: Prepped veggies, 1 – 8 oz jar Fennel frond pesto, 2 lbs Pasta or polenta

  • Recipe cards

What to Bring:

  • Cutting board, or purchase sustainable Bay Area Redwood board for $10

  • Chef’s knife

  • Extra vegetables hiding in your fridge that you don’t know what to do with

  • Extra storage containers for pesto and prepped veg. We will have jars available for purchase.
